And amazing, appetizing, apple-icious recipes

New Orleans Beignets
Makes 15 beignets
1 whole egg
3 tablespoons superfine sugar
1/2 cup milk
1/4 teaspoon vanilla extract
3/4 cup flour
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
2 Enza Jazz apples, cored and sliced into matchsticks
Oil for deep frying
Confectioner’s sugar for dusting
Separate egg and mix yolk with 2 tablespoons sugar. Stir in milk, vanilla and dry ingredients and mix until smooth. Leave batter mixture to rest in the fridge for 20 minutes.

with Apples, Almonds and Blue Cheese

Ingredients:
Cooking spray
4 boneless skinless chicken breast halves (about 5 ounces each)
4 ounces crumbled blue cheese (any variety, including Gorgonzola)
1/2 cup slivered almonds
1 apple (preferably Mackintosh, Gala or Fuji), peeled, cored and diced
3 teaspoons chopped fresh dill
Salt and freshly ground black pepper
4 teaspoons olive oil
1 tablespoon plus 1 teaspoon (4 teaspoons) dried minced onion

2 packages Zatarain’s Jambalaya Mix
1 pound boneless skinless chicken breasts, cubed
1 pound smoked sausage, sliced 1/4-inch thick
1/2 cup sliced green onions (optional)

with Shrimp & Rosemary

16 ounces dried angel hair pasta
1 tablespoon extra virgin olive oil
3/4 cup chopped onion (about 1/2 onion)
4 teaspoons minced garlic
3 teaspoons seeded and minced serrano chile (about 1 chile)
2 teaspoons finely chopped fresh rosemary and sprigs for garnish
2 cups Angel Juice Pinot Grigio
3 tablespoons fresh lemon juice, about 1 lemon
24 large shrimp, peeled and deveined
4 tablespoons butter
1/4 cup pine nuts, toasted in a 350°F oven for 10 minutes until lightly browned

Alabama
Freeman A. Hrabowski, president of the University of Maryland, Baltimore County, will address the annual African American Business Council luncheon on June 28. Hrabowski, who is chairman of President Barack Obama’s Advisory Commission on Education Excellence for African Americans, has a national reputation for his work studying the performance of minority students in math and science. Hrabowski, named one of the 10 best college presidents in the country by Time magazine, was a child leader in the Civil Rights Movement in Birmingham in the 1960s.
 

Arkansas
The Liberty Counsel filed a motion and a brief in United States District Court for the Eastern District of Arkansas seeking to intervene on behalf of a Concepts of Life crisis pregnancy center to defend against a suit filed by the American Civil Liberties Union and the Center for Reproductive Rights. The groups seek to impose a permanent injunction before the Human Heartbeat Protection Act goes into effect July 18. Liberty Counsel also filed a brief opposing the ACLU’s request for an injunction. The “Heartbeat” bill states that when a woman seeks an abortion at or after the 12th week, doctors must test for a fetal heartbeat before an abortion is performed and inform the pregnant mother that the child in her womb has a heartbeat. If a heartbeat is detected, a woman cannot have an abortion, except in cases of rape, incest, and if a mother’s life is in danger. “As we promised when the legislation was introduced, Liberty Counsel will defend this law without reservation for the people of Arkansas, born and pre-born,” said Matt Staver, founder and chairman of Liberty Counsel. “No right is more foundational than the right to life. Without life, all other rights are irrelevant,” concluded Staver.
